Momotaro , from  Jean Banchet Award of Culinary Excellence winner  Chef Gene Kato & Boka Restaurant Group , brings an authentic and refined Japanese dining experience to Nashville. Rooted in tradition yet shaped by modern culinary culture, Momotaro is known for pristine sushi, robata-grilled specialties, and a thoughtfully curated beverage program — all delivered within a striking, high-energy space.

What You’ll Do

• Maintain a clean and organized work environment.  
• Follow food safety procedures and protocols, including but not limited to proper food preparation temperatures, FIFO practices, personal hygiene, product labeling, and safe food storage.  
• Follow recipes and instructions provided by the Pastry Sous Chef and/or Pastry Chef.  
• Create an appropriate production prep list and ensure the preparation of adequate levels of mise en place.  
• Prioritize prep tasks and demonstrate effective time management.  
• Portion, plate, and garnish food according to restaurant standards.  
• Work collaboratively with all restaurant team members including BOH and FOH staff.  
• Produce consistent, high-quality food items that meet the restaurant's standards.  
• Maintain clear communication with team members and management.  
• Handle guest allergies with the utmost care and adhere to established restaurant allergy protocols.  
• Attend all scheduled shifts and meetings on time.

• A professional Pastry Cook with solid fundamentals and kitchen experience
• Organized, reliable, and calm under pressure
• Team-oriented and communicative
• Open to feedback and motivated to improve
• Detail-driven with a respect for standards and systems

• Lift and move up to 10 pounds; frequently lift and/or move up to 25 pounds; and occasionally lift and/or move up to 50 pounds
• Safely and effectively use all necessary tools, equipment, and cleaning chemicals
• Stand and walk for an entire shift, including moving safely through all areas of the restaurant which may include stairs, uneven, and/or slick surfaces
• Ability to bear exposure to hot and cold environments
